Morgan got this recipe in Spain from a Bolivian friend.
1/2 lb Chicken
1 C rice cooked in 3 cups water (it's a fat, roundish rice)
1 onion
1 green pepper
1 carrot
tomato paste (just enough to add color and a little flavor)
Spices:
black pepper
cumin
sweet red pepper
garlic powder
Boil chicken and save water
Chop vegetables and saute in frying pan with a little olive oil
Add tomato paste and spices--"a little of each".
Shred chicken and add to vegies.
Put it all back into the water the chicken was cooked in and add rice.
